October: French Wine Tasting with Molecular Pairing

 

On Tuesday, October 22, at 7:00 p.m., we have the honor of hosting Manuel Fernández, runner-up in the Spanish Sommelier Championship, to guide us through a unique experience that blends French wine tradition with the innovative gastronomy of Molecular Sommelier.
This approach, developed by François Chartier and outlined in his famous book Tastebuds and Molecules, invites us to explore the world of wine from a completely different perspective. If you want to know more about his work click here.

On this occasion, we will explore the main French wine regions through their most iconic white varieties.
Additionally, we will enjoy dishes specially designed to highlight the dominant aromatic molecules of each wine, creating a perfect harmony between flavor and science.

During this tasting, we will travel through the following regions and varieties:

  • Sauvignon Blanc from Bordeaux: Kressmann Monopole Blanc 2022
  • Viognier from the Rhône Valley: Reverie 2023 – Romain Duvernay
  • Gewurztraminer from Alsace: Gewurztraminer Des Chasseurs De Lune 2021 – Bestheim
  • Chablis from Burgundy: Chablis 2022 – Domaine Soupe
  • Chenin Blanc from the Loire Valley: Les Ondines 2022 – Domaine des Trottières

Each of these varieties will be deconstructed into their aromatic elements to fully highlight their potential, while Manuel Fernández guides us through this fascinating world of textures and flavors.

The wines will be tasted with a small molecular pairing made by Lisa&Jose in our kitchen… all a pleasure for the senses!
