Born over two October dawns —18 and 19 October 2025— and milled immediately in our own micro-mill using cold extraction, this extra virgin olive oil is the purest expression of our century-old family grove in Almedinilla (Córdoba).
A balanced blend of Picual, Carrasqueño and Hojiblanca, EU-certified organic, hand-picked by our family to ensure only healthy, perfectly green fruit.

Tasting notes (medium-high green fruitiness)

  • Nose: olive leaf, green tomato, fresh almond, cut grass and green apple.

  • Palate: fresh entry, balanced bitterness and pepper; hints of artichoke, banana skin and wild herbs.

  • Finish: long, clean and vibrant.

Pairing suggestions

Best served raw: rustic toast with tomato and salt, seasonal salads, grilled vegetables, fresh cheeses, white fish, pumpkin cream, light salmorejo — and even a drop on dark chocolate (pure magic).
