An Exclusive Experience at Patio del Posadero
In 2025, Patio del Posadero Hotel Boutique&Bistró presents a new and fascinating gastronomic experience, an exclusive dinner that will take our guests on a gastronomic journey through the history of Córdoba.

Description

Inspired by the city’s origins and its transformations over the centuries, our chef José Ariza has created a unique menu that celebrates the historical influences of Córdoba, from the Visigoths and Romans to the splendor of Al-Andalus and the present day.

Available only on Mondays at 7pm, this experience will be offered in the lounge of the Boutique&Bistró hotel, with a maximum of 16 diners, from February 10 to June 2, 2025 inclusive.

We are excited to offer food lovers the opportunity to share the evening with other guests.

For those who enjoy conversation and the social atmosphere of the Roman convivium style, we offer the option of sharing a table with other diners (8 people), with a touch of conviviality and friendship.

For more intimate gatherings, there will be another 4 tables for 2 people.

A historic menu that takes us through Cordoba’s tradition, available to both our guests and visitors to Cordoba (always by prior reservation).

 

Below, we present a tour of each of the dishes that make up this gastronomic tour:

 

The Origins: Visigoths and Rome

Garum of anchovies (pâté) accompanied by “unleavened” rye bread.
This first course pays homage to one of the oldest culinary traditions in the city: garum.

This condiment, so present in Roman gastronomy, was a fermented condiment used to flavor many dishes.

In our version, we present it as an anchovy pâté, creamy and full of flavour, accompanied by unleavened rye bread, a recipe inspired by ancient Visigothic customs, with an authentic and ancestral touch.

Al Andalus and the Three Cultures

During the Al-Andalus period, Córdoba stood out as a melting pot of three cultures: Arab, Jewish and Christian. Each of these cultures left a deep mark on the local gastronomy, and we wanted to reflect this cultural richness in three dishes.
Arabic: Vegetable Tabbouleh
Tabbouleh, a refreshing salad originating from Arab culture, is the first dish of this phase. Our version of this classic is made with fresh seasonal vegetables, seasoned with aromatic herbs, lemon and a touch of olive oil, representing the freshness and lightness of the Arab diet in Cordoba.
Sephardic Jewish: Sufganiot (Fritters) with Spinach and Pine Nuts
From the Jewish tradition of Cordoba, we come to this dish full of history: the sufganiot, typical fritters made with spinach and pine nuts. These fried fritters are made with fresh spinach and pine nuts, a dish full of contrasts between the softness of the spinach and the slightly sweet and crunchy flavour of the pine nuts.
Cristiana: Cordero Asado con Naranja y Canela
Roast lamb is one of the most emblematic dishes of Christian Cordoba cuisine. In this version, the lamb is seasoned with orange and cinnamon, ingredients that add a sweet and spicy touch, creating a juicy and flavorful dish, ideal for remembering the rich heritage of Christian Cordoba.

20th Century: A Typical Flavor of Córdoba


Dessert: Manolete

Para cerrar esta experiencia gastronómica, celebramos a uno de los más grandes iconos de la historia de Córdoba: Manolete, el célebre torero. En honor a él, nuestro postre es un pastel cordobés en formato individual, inspirado en la tradición que cuenta que Manolete solía desayunar todas las mañanas con un trozo de este delicioso pastel. Una pastelería local le dedicó una versión en miniatura, y nosotros te lo presentamos en una interpretación única. Este pastel, relleno de cabello de ángel y cubierto con azúcar glas, es un homenaje a la historia y al sabor más auténtico de Córdoba, simbolizando la conexión entre la gastronomía local y la figura del torero.

 

Special Pairing for a Gastronomic Walk through the History of Córdoba

In this unique experience, we not only invite you to travel through the most representative flavours of the history of Córdoba, but also to enjoy a selection of carefully chosen drinks to complement each dish. This pairing is designed to highlight the nuances and textures of each of our dishes, creating a complete multi-sensory experience. Below, we present the drinks that will accompany each of the dishes

    • Black Beer for Garum
      To begin this historical journey, we paired the anchovy garum with a dark beer, which, with its intensity and toasted notes, contrasts perfectly with the creaminess and deep flavour of the anchovy paté. The dark beer enhances the salty notes of the garum, creating a rich and balanced combination.

 

    • Orange Wine for Tabbouleh

      The fresh and light vegetable tabbouleh is accompanied by an orange wine, which, with its freshness and citrus notes, highlights the freshness of the vegetables and aromatic herbs. The orange wine, with its balance between sweet and acidic, complements the lightness of the tabbouleh, creating a refreshing and harmonious combination.

 

    • Kosher Rosé for Sufganiot
      For the spinach and pine nut sufganiot, we have chosen a kosher rosé, a wine that, with its freshness and fruity notes, perfectly accompanies the contrasts between the softness of the spinach and the crunchy sweetness of the pine nuts. This subtle and elegant wine offers an ideal contrast to this traditional Jewish dish from Cordoba.

 

    • Amontillado for Roast Lamb with Orange and Cinnamon
      Orange and cinnamon roast lamb, with its intense and spicy flavours, is paired with an amontillado, a wine that adds depth and complexity. The dried fruit and spice notes of the amontillado complement the sweet and spicy flavours of the lamb, creating a symphony of flavours that honours the Christian tradition of Cordoba.

 

  • Chemex (infused coffee) for Manolete
    To round off this gastronomic experience, we offer a Chemex, an infused coffee that stands out for its smoothness and elegance. This coffee, with its floral and fruity notes, accompanies the Manolete cake in a sublime way, balancing the sweetness of the dessert and offering a perfect ending to this gastronomic journey.

Each drink has been selected to complement and enhance the flavours of our dishes, creating a unique pairing that will allow you to enjoy a complete and immersive experience. We hope you enjoy this journey through the gastronomic history of Córdoba!
Atmosphere and Exclusivity: This gastronomic event is not only a feast for the senses, but also a social experience. In the style of ancient Roman banquets, we foster an atmosphere of camaraderie and conversation, where gastronomy, wine and conversation come together. Reservations are limited, and given the exclusive format, we invite you to make sure you have your place for this unique event in the heart of Córdoba.
