In 2025, Patio del Posadero Hotel Boutique&Bistró introduces a new and fascinating gastronomic experience: an exclusive dinner that takes you on a culinary journey through Córdoba’s history. Inspired by the city’s origins and its transformations over centuries, our chef José Ariza has crafted a unique menu celebrating Córdoba’s historical influences, from the Visigoths and Romans to the splendor of Al-Ándalus and modern times.
Available only on Mondays at 7:00 PM, this experience will take place in the dining room of our Boutique&Bistró hotel, with a maximum of 16 diners. This exclusive event is designed for lovers of fine gastronomy, offering options for those who enjoy a social atmosphere in the style of a Roman convivium, sharing a table with other guests (8 people), or for those who prefer a more intimate setting, with 4 private tables for 2 people.
The menu, a homage to Córdoba’s culinary tradition, is available to both our guests and Córdoba visitors, always with prior reservation. Get ready for an unforgettable culinary journey!
A Menu that Tells Córdoba’s History
The Origins: Visigoths and Rome
- Anchovy Garum with Unleavened Rye Bread
Our journey begins with a dish honoring one of the city’s oldest culinary traditions: garum. This iconic Roman condiment was used to flavor numerous dishes. Our version reinvents it as a creamy, flavorful anchovy pâté, accompanied by unleavened rye bread inspired by ancient Visigoth customs. This dish captures the essence of Córdoba’s earliest culinary influences.
Al-Ándalus and the Three Cultures
During the Al-Ándalus era, Córdoba was a melting pot of cultures: Arab, Jewish, and Christian. Each left an indelible mark on the local gastronomy, which we have captured in three representative dishes:
- Vegetable Tabbouleh (Arab inspiration) A fresh and light dish, this salad originating from Arab culture is made with seasonal vegetables, seasoned with aromatic herbs, lemon, and a touch of olive oil. It represents the freshness and balance of the Arab diet in Al-Ándalus.
- Spinach and Pine Nut Sufganiot (Sephardic tradition) These fried doughnuts are a specialty of Sephardic Jewish cuisine. The combination of fresh spinach and pine nuts creates the perfect contrast between softness and crunch, paying tribute to the Sephardic influences in Córdoba.
- Roast Lamb with Orange and Cinnamon (Christian heritage) Roast lamb is an emblematic dish of Córdoba’s Christian tradition. In our version, the lamb is seasoned with orange and cinnamon, offering a sweet and spiced combination that highlights the richness of this historical period.
20th Century: Manolete and Córdoba’s Sweet Tradition
- Manolete Cake To conclude this gastronomic journey, we pay tribute to the iconic bullfighter Manolete, a key figure in Córdoba’s history. The dessert is an individual Córdoba cake filled with angel hair squash and dusted with powdered sugar, inspired by the bullfighter’s favorite breakfast. This dish symbolizes the union of pastry tradition and the city’s cultural legacy.
Pairings: Flavors That Enhance
Each dish on this menu is accompanied by a specially selected beverage to elevate its flavor and create a complete multisensory experience:
- Anchovy Garum: Dark beer with toasted notes that contrast with the pâté’s creaminess.
- Vegetable Tabbouleh: Orange wine that highlights the freshness of the herbs and citrus notes.
- Spinach and Pine Nut Sufganiot: Kosher rosé, fresh and fruity, ideal for balancing the dish’s flavors.
- Roast Lamb: Amontillado, a complex wine with notes of nuts and spices that complement the lamb.
- Manolete Cake: Chemex, a coffee brewed with floral and fruity notes, perfect for closing the evening.
