Almond ajo blanco foam from Córdoba, Muscat grapes, and early harvest green olive oil
A light, fresh bite that acts as a sensory key. It opens appetite, heart, and conversation. The Muscat grape brings sweetness, the ajo blanco depth, and the green olive oil… character.
2. Lisa’s Spoon
Roasted pumpkin with smoked ricotta, toasted hazelnut, and sage dust
A dish that smells of lit ovens and golden fields. It’s Lisa’s plate, full of childhood flavors, Veronese memories, and love for simplicity. Paired with a Montilla-Moriles white aged on lees, creamy and persistent, like a caress.
3. Grandmother’s Hand and Gentle Fire
Homemade ravioli with seasonal mushrooms, cured egg yolk, and black truffle
Here, pasta becomes language. José makes each ravioli by hand, and Lisa seals them with the gesture of one who wraps a secret. Truffle from the Subbética and cured yolk complete this autumn ritual. Paired with an Italian Blanc de Noir sparkling wine, a refined nod to Lisa’s roots.

Slow-cooked suckling lamb, roasted eggplant cream, and pomegranate
A dish that smells of old kitchens and eternal Sundays. The meat falls apart, the eggplant embraces, the pomegranate surprises. The wine, a red crianza from the Sierra de Málaga, crowns the scene with nobility.
5. La Dolce Vita of the South
Pear in red wine, orange blossom mascarpone cream, and bitter almond sponge cake
