Born in La Escala (Gerona), Jose grew up in the family restaurant, Sotavent. It was there that he discovered the art of hospitality and began imagining a future behind the stove. His training at the prestigious Sant Pol de Mar School and his passion for interior design led him to develop a unique vision of gastronomy.
At Bistró, he transforms local ingredients into creations that blend the Mediterranean and Córdoba, always with one principle: excellence expressed with elegant simplicity.
Every ingredient at Bistró tells its own story: sun-ripened tomatoes from the Cordoban orchards, artisanal cheeses from the mountains, and oils from century-old olive trees. We collaborate with small producers who honor tradition and share our pursuit of excellence.
