As you know already we love looking for italian recipes in the blogs. We already wrote about the Sbriciolata of Apple, so today we are going to introduce you a new delight from Italy, the recipe of Sbriciolata of ricotta and amaretti. You will love it!
This italian blogs reminds Lisa childood memories in the kitchen with her mother, as she says “from her I learned all I know”.
There is blog that we really like called hovogliadidolce and usually it includes easy and perferct recipes for each of the breakfast.
To prepare this dessert the hardest thing to do may could be to get the Amaretti which are biscuits made of bitter almonds, but we guess most of you know the liqueur.
We have a particular lucky and it is the father of Lisa, always coming to see us from Italy, brings us a big bag of Amaretti cookies, because as I said, here we find it hard to find them.
This recipe is perfect now that the weather is starting to cool down, it gives a fragrant and sweet to the first autumn breeze touch.
Ingredients for the Sbriciolata of ricotta and amaretti:
Fort he mass:
230 grams of flour
50 grams of amaretti biscuits
1 egg yolk
100 grams of brown sugar
120 grams of butter
1 pinch of salt
For the filling:
350 grams of ricotta cheese or cottage cheese (we used cottage cheese in this case)
100 grams of sugar
1 egg
100 grams of amaretti
Chocolate chips to make it more sweet and irresistible
Although the original recipe comes in cake form, we prefer to make mini-tartlets as it is more comfortable to serve and taste.
Elaboration of the recipe:
Mix all the ingredients of the mass until you come up to a consistence mix with a dry texture as it would be like a crumb.
Put a small part on the base and smash it well with a spoon or by hands.
Then put a spoonful of premixed filling in a bowl or Thermomix (we are addicted to these machines) and then put a bit of mass.
Cook in the oven for 25 or 30 minutes at 180 degrees.
Let it cool down and sprinkle with powdered glaze sugar.
