A very fruity, fresh and dry white wine made from Moscatel Morisco, Pedro
Ximénez and Doradilla to provide the Mediterranean salt that bathes our
coasts. Three native varieties.
Straw yellow colour with golden highlights. Aromas of apricot, ripe stone
fruit with light tropical touches. The salinity of the Doradilla is noticeable
on the palate, balanced, fleshy and with a long aftertaste.

Tasting Notes:
It expresses the complexity, finesse and aromas of the grape, soil and
climate from which it comes, with fruity aromas (peach, grapefruit,
pineapple), floral aromas (orange blossom) and while the palate is elegant,
fresh, balanced and with a slightly bitter finish typical of the variety, as well
as hints of peach and pineapple.
One of the few Spanish wines included in the prestigious guide “The 1001
Wines You must taste before you die” by Neil Beckett.

Palo Cortado is born from special fino butts that, for various reasons, take
a different path to the rest. It loses the veil of flor (biological aging) before
time and begins oxidative aging.
Criaderas and soleras system, 25 years
Tasting notes:
Amber hue with copper and greenish reflections. Very intense with aromas
of tobacco leaves, wood and spices such as pepper or cloves, notes of
citrus peel and fine pastries. Nuances of dried fruits such as walnut or
hazelnut. Dry entry but very broad in the mouth, marked acidity that gives
way to a salty sensation. Intense and elegant.

After aging for about 10 years under the veil (biological aging) of flor in American oak casks and the passage of time, the veil of flor begins to weaken, losing its protection, beginning a long oxidative aging of 35 years.
Tasting Notes:

Amber and, when swirled, it stains the glass with a beautiful range of copper tones. Very intense, spicy and noble wood when the glass is still, giving way to a touch of varnish and notes of fine pastries. A saline and fresh aroma accompanies the memory of dried fruit in the background. Dry and sharp entry, saline, mineral. Elegant and persistent final bitterness, with aromatic nuances of noble wood. High aromatic and taste persistence.

Tasting Notes:
Awarded the Mundus Vini Gold Medal. Mahogany with old gold trim and slow tears. The intensity of the old American oak wood stands out with aromas of toffee, smoke, vanilla and candied nuts. It is accompanied by ripe fruits. Dry, smooth, not astringent and with a marked saline sensation. The wood appears in an elegant bitterness that gives complexity and persistence

Tasting notes:
Dark mahogany with slight movement in the glass. Very intense, where the aromas of Pedro Ximenez, such as honey, caramel and prunes, and a citrus touch of orange peel, are combined with the oxidative aromas of Oloroso such as toast, toffee, smoke and spices. Sweet and fresh entry.
Grape: Pedro Ximenez. After the grapes are harvested from mid-August, they are exposed to the sun: the grapes are left in the sun in baskets for a period of time between 7 and 9 days.
Almost three kilos of grapes are needed to obtain a litre of wine. Once pressed, it is alcoholised to 9% vol. and remains in a stainless steel tank for
12 months.
After this time, it is alcoholised to 17% and put into American oak casks for oxidative ageing for 20 years.
Tasting Notes:
Dark mahogany with beautiful movement in the glass. Coffee, dark chocolate, dried fruit, grapes, plums, dried apricots, hints of cinnamon, something balsamic and a citrus sensation, of orange. Sweet entry, which is perfectly balanced with the citric acidity, of great persistence.
