It arrives just as summer begins to fade, when the light turns softer and more golden and the countryside begins one of its oldest rituals: the grape harvest<\/strong>.<\/p>\n That is why we have chosen the grape as the guest ingredient for this new edition of Brunch Collection<\/strong>.<\/p>\n Not only for its flavour, but for everything it represents.<\/p>\n We are used to finding it in a glass, but everything begins much earlier.<\/p>\n With a bunch of grapes.<\/p>\n With months of waiting.<\/p>\n With a particular land, the sun, the work of those who tend the vines and the decision of knowing exactly when the time has come to harvest.<\/p>\n The grape harvest is one of those rituals repeated from generation to generation. It reminds us of something we value deeply at Patio del Posadero: good things need time<\/strong>.<\/p>\n Grapes can be fresh, sweet, sharp, roasted, dried or fermented. They can become food, wine and even memory.<\/p>\n Perhaps that is why they have been part of Mediterranean tables for thousands of years.<\/p>\n To talk about grapes in C\u00f3rdoba inevitably means talking about Montilla-Moriles<\/strong>.<\/p>\n Our region is home to one of Spain\u2019s historic wine denominations. The names Montilla and Moriles were legally protected as early as 1932, although winemaking traditions here stretch back much further.<\/p>\n At the heart of this landscape is the Pedro Xim\u00e9nez grape<\/strong>, a variety deeply adapted to the climate and soil of C\u00f3rdoba.<\/p>\n From it come remarkably different wines: young wines, wines aged in traditional earthenware vessels, Finos, Amontillados, Olorosos and the extraordinary sweet Pedro Xim\u00e9nez wines.<\/p>\n One grape capable of telling many different stories.<\/p>\n And that fascinates us.<\/p>\n Our relationship with wine goes far beyond the wine list in our bistro.<\/p>\n With Ariza & Cazzola Family Collection<\/strong>, we wanted to create something far more personal: a small collection of wines that would speak about us, our children and the two lands that are part of our family story: C\u00f3rdoba and Verona<\/strong>.<\/p>\n Each bottle has its own name.<\/p>\n Ernesto, Emma, Ettore, \u00c9vora and Promise.<\/strong><\/p>\n Five very different wines, created with small family-run wineries and produced in extremely limited editions, with each bottle individually numbered by hand<\/strong>.<\/p>\n We are not interested in producing large quantities.<\/p>\n We want to preserve something.<\/p>\n A moment, a vintage, a family story.<\/p>\n That is why our collection consists of just 500 bottles of each label<\/strong>, with only 250 bottles of Promise.<\/p>\n A collection conceived more as a memory than as a production.<\/p>\n And within it, two wines bring us directly back to C\u00f3rdoba.<\/p>\n \u00c9vora<\/strong>, our organic Fino from Montilla-Moriles, made from Pedro Xim\u00e9nez grapes and aged under a veil of flor. Dry and saline, with notes of almond, toasted bread and yeast. A limited edition of only 500 individually numbered bottles.<\/p>\n And Ettore<\/strong>, our organic Pedro Xim\u00e9nez from Montilla-Moriles: sweet, deep and enveloping, with notes of raisins, honey, cocoa and candied fruit. Again, produced in an edition of just 500 bottles.<\/p>\n Two completely different expressions of the same land and the same grape.<\/p>\n Perhaps that is why we love harvest season so much.<\/p>\n Because it speaks of patience.<\/p>\n Of picking only when the right moment has arrived. It is a philosophy very close to the way we understand Patio del Posadero.<\/p>\n Small by design.<\/p>\n Working with the seasons, local producers, small batches and experiences that do not need to be repeated in exactly the same way.<\/p>\n This month, the grape also finds its way onto our table.<\/p>\n Sometimes fresh.
